All experiences at Bocado must be paid in full at the time of booking. Secure online payment is processed through Stripe, PayPal, or MercadoPago. Once your reservation is completed, you will receive a confirmation email with your selected experience, date, time, meeting point, and recommended arrival details. Cancellation & Refund Policy More than 72 hours before the experience: Full refund. Between 24 and 72 hours before the experience: 50% refund. Less than 24 hours before the experience: No refund. Late Arrivals Guests who arrive more than 15 minutes after the scheduled start time will be considered a no-show. No refunds or rescheduling options are available for late arrivals. Cancellations by Bocado If an experience must be canceled or rescheduled due to weather conditions or force majeure, guests may choose between a full refund or selecting a new date. Service Description

Discover the soul of Mexican cuisine through its most essential element: salsa. In this hands-on cooking workshop, you’ll learn how to prepare authentic Mexican salsas using a traditional molcajete, an ancestral stone tool that brings depth, texture, and balance to every flavor. The experience begins with a warm welcome and an introduction to Mayan cuisine and ingredients. You’ll explore the chiles, tomatoes, herbs, and spices used in traditional salsa-making, while learning how technique and ingredient selection shape flavor more than heat alone. Guided by our host, you’ll grind and blend your own salsa in the molcajete, discovering how rhythm, pressure, and time transform simple ingredients into something extraordinary. Next, you’ll prepare tortillas using Mayan-style masa, shaping them by hand and cooking them on the comal. This step connects salsa to its natural companion — freshly made tortillas — and highlights the importance of maize in Mexican culinary tradition. To complete the experience, you’ll enjoy your tortillas as quesadillas, accompanied by locally made longaniza from Valladolid, your freshly prepared salsa, a traditional agua fresca, and a local sweet treat that honors regional traditions and adds a final touch of warmth to the tasting.
